Brisbane, the capital city of Queensland, is midway up the east coast of Australia - 27.5oS, 153oE. With the Gold Coast to the south and the Sunshine Coast to the north, domestic and international airports, Brisbane is an ideal headquarters for an Australian holiday. Brisbane, indeed all Queensland, operates on Eastern Standard Time which is 10 hours ahead of GMT. Summertime or Daylight Saving is not observed. Residents and visitors to Brisbane enjoy a wide range of landscapes and lifestyles. The inner-city, metropolitan Brisbane is surrounded by leafy, sometimes very hilly, suburbs. Further out in the suburbs, the traditional Australian house on a large block or even acreage dominates. Moreton Bay and its islands provide water sports, sailing and sea-side suburbs. The Pacific Highway leads south to the Gold Coast and its well-known surf beaches. North is the seaside town of Redcliffe, the rainforest and picturesque countryside of Pine Rivers, Caboolture and the Glasshouse Mountains. Bribie Island offers the first surf beach to the north. The Sunshine Coast towns and hinterland are popular holiday spots. Travelling west of Brisbane, past Ipswich, you soon climb the Great Dividing Range to Toowoomba and the rich plains of the Darling Downs.

Cairns Far North Queensland is the perfect escape for nature lovers with spectacular National Parks abundant with amazing bird and animal life. Restaurants, cafes, cosmopolitan shopping and activities are an everyday event in this bustling town. Only a short drive away you come to Cairns northern beaches which will delight anyone. This is the place to ride horses, sail, windsurf or relax under a palm tree and watch the colours of the sky change as the sun sets. The beaches are made up of Machans, Holloways, Yorkeys Knob, Trinity, Palm Cove and Ellis Beaches. Each is a small separate township with its own distinctive character. Together, the beachside towns provide much of Cairns accommodation. From the beaches to the mountains, a day trip up to Atherton Tablelands will be spectacular where you can canoe on freshwater lakes, shop in craft stores and view some of the majestic views across the mountains to the sea. The rainforests of the Wet Tropics have been described as a ‘living museum’ of flora and fauna and were placed on the World Heritage List in 1988. The Wet Tropics cover an area of almost 9000,000 hectares of rainforest and tropical vegetation. Previously unidentified species of birds, insects and mammals have been discovered from within these rainforests delighting biologists and nature lovers alike. The local history, culture and tropical lifestyle are to be truly envied and enjoyed when visiting North Queensland. There is a diverse mix of cultures and people that are proud to call this area home. The first inhabitants were the Aboriginal and Torres Straight Islanders who fished and hunted the abundant wildlife of the region, then came the Dutch navigators and Captain James Cook, who claimed the land for Britain and instrumented the settlement of European communities. The tropical climate encourages an outdoor lifestyle with the famous Queensland barbeque influencing cuisine in the tropics. Exotic fruits and spectacular seafood are also a normal way of eating when visiting or living in the North.

From glamorous Four Mile Beach to the wilderness of Dickson Inlet, picturesque Port Douglas has become an international holiday mecca - just 70 kilometres north of Cairns. With nothing taller than a palm tree, development is low-rise, low-key and relaxing. It is regarded as the most popular base from which to explore the northern areas of the reef and rainforest coast of Daintree and Cape Tribulation. Despite its popularity and sophisticated five star accommodation, it retains a close community atmosphere. Sharing the same tropical latitude as Tahiti, Port Douglas still attracts visitors for its old fashioned charm, wide streets shaded by trees and superb holiday attractions. There are more than 100 day tour options which depart Port Douglas daily.

The Coral Sea Islands Territory comprises the many small islands spread over a huge sea area of approximately 780,000 sq km, extending east and south from the outer edge of the Great Barrier Reef, and include Heralds Beacon Island, Osprey Reef, the Willis Group, and fifteen other reef/island groups. In 1969, the Coral Sea Islands became a territory of the Commonwealth under the Coral Sea Islands Act. In 1987, the boundaries of the Territory were extended around Elizabeth and Middleton Reefs. Discovered in 1803, they were briefly exploited for guano in the 1870s and 1880s but were soon abandoned due to a lack of permanent water. During the 19th century many ships were wrecked in the area due to constantly shifting sand cays, and the reefs and islands have often been named after the ships which foundered there. They are still uninhabited today, apart from a large population of sea birds, and the occasional meteorologist on Willis Island. Unmanned weather stations, beacons, and a lighthouse are located on several other islands and reefs. Occasional tropical cyclones sweep over the islands from November to April, leaving the sand and coral based mass with little or no vegetation. The coral and sand islands are quite small with some grass and low vegetation cover. There is no fresh water. Two species of sea turtle nest in the area, and at least twenty-four bird species have been recorded. A Migratory Birds Ordinance is in force, and gives effect to the Australia-Japan and Australia-China agreements on endangered and migratory birds. In 1982, the Lihou Reef and Coringa-Herald Nature Reserve were declared by the Commonwealth Government to protect the wildlife in this part of the Territory. In 1987, Elizabeth and Middleton reefs were declared a marine national nature reserve. All wildlife in the Territory is now legally protected under Part III of the National Parks and Wildlife Regulations.

Aqualina: At Aqualina, you’ll find some of Italy’s most celebrated dishes as well as contemporary inventive cuisine. Start with lobster ravioli, followed by arugula and radicchio with prosciutto chips, and a Venetian seafood platter. You won’t be able to say no to these famous desserts: marsala custard, lemon soufflé, or tiramisu. The chefs love to be inspired, so after an onshore visit to a local market, you can also expect a delectable dish so local, you’ll feel like you’re not onboard anymore.

Prime C: At Prime C, you’re in for more than an array of delectable dining such as steaks cooked to perfection, crab cakes with remoulade, lobster bisque, lamb, game hens and seafood. Last but certainly not least, try the mini cinnamon-sugar donuts with dipping sauces for dessert. Expect a marvelous evening in a warm wood-paneled ambiance with stunning views and lush décor. If the chef has made a visit to a local market while in port, you’ll also have an authentic local dish to look forward to.

Specialty Dining: Guests staying in a suite are welcome to dine any night of the voyage in Aqualina or Prime C at no charge. Guests who have booked a Club Veranda, Club Oceanview, or Club Interior stateroom are subject to a US $ 30 (per person) cover charge in Aqualina or Prime C.
